Hocus Pocus Bun Recipe

I was looking for easy snacks to make for spooky movie nights, in this, the best season ever-Spooky Season! I stumbled across something called Hocus Pocus Buns on Facebook so I went hunting for a recipe and I found a few which seemed to differ slightly, but the one I'm sharing here was the easiest, messiest, quickest, and the most fun sounding so I tried it, and OH.MY.GOD!! I found this recipe at Fork to Spoon and the lady behind Fork to Spoon may be my new favourite blog person. Please go check out her recipes, I'm going to work through all the yummy air fryer ones! 
Anyway, back to Hocus Pocus Buns...




You're going to need Marshmallows (I used the normal-sized pink and white ones), Cinnamon sugar, butter, and croissant dough (the jus-rol stuff works well although it comes pre-perforated which can cause some mess if you don't seal the properly). 

INGREDIENTS

1/2 Cup Melted Butter 
1/2 Cup Granulated Sugar
2 Tsp Ground Cinnamon 
Croissant Dough
Marshmallows (8-12)

METHOD

Melt your butter in a bowl and set to side
Mix sugar and cinnamon together to make cinnamon sugar and set aside
Roll out dough and cut into 8-12 equal pieces-the Jus-Rol dough makes exactly 12 so if you use that you get more!

Once everything is prepared dip each marshmallow in melted butter then roll it in the cinnamon mixture and place it in the centre of your dough. Close up the dough any which way you can to ensure no gaps.

Brush all your wrapped marshmallows with more of the butter and then sprinkle with your leftover sugar,

Set your Air Fryer to 160° and a cooking time of 8 minutes. 

Line the air fryer tray with parchment paper or silicon fryer liners (if you have them they will keep your fryer cleaner in case of marshmallow leaks).

Place each bun in the fryer spaced apart to avoid sticking together. (The ninja dual fryer 9.5l fits 6 in each side-otherwise you may have to do two batches).

And that's it! They come out you place them on a tray or plate and you can dig in. Just remember hot marshmallows can be TOO hot so maybe wait more than the 30 seconds I did!

15 minutes and boom, perfect movie night snacks! I think maybe a Hocus Pocus marathon.

If you know me at all and you're reading that title and thinking something is very very wrong! I am self-admittedly NOT a cook. The kitchen is not my domain, unless we're talking about baking which is a horse of a different colour of course. I am the furthest thing from a foodie it is possible to be so I tend to just stay out of the kitchen altogether and leave it to Damian, who LOVES his food. So trust me I get it that you might be thinking "there is absolutely no way AJ is cooking actual food" and honestly you'd be right! I am categorically not being the chef in this scenario-I have however set Damian a challenge, which is to cook a healthy dinner for four (or a meal that he can cook and freeze to cover at least four meals) for less than £5.50-using Schwartz Recipe Mixes!

I don't know if you know this about me but I am an awful, awful chef! I cannot cook, I'm terrible with gauging timings, I can't eat much so I can't taste the food to see if it needs seasoning, and I don't have the patience required if I'm quite honest. My favourite (and most embarrassing) story about me trying to cook, involves me phoning Damian-while he was away in Newcastle- to ask how to turn our oven on! We'd lived in the flat for two months at this point *insert shameful dog eyes here*!

Chocolate Orange Marble Cupcakes

So I have to confess that I have spent the weekend basically just drooling over the new Smeg UK Stand Mixer. It's just so bloody pretty, but there is only so many times you can look at such a thing without getting the urge to bake so I took myself off to my mediocre crappy kitchen utensils and let loose in the kitchen. I actually baked twice this past weekend so I'll share the other recipe soon- in other words look forward to finding out how to make my favourite M&Mmmm Pie.

But first, cupcakes:

Clearly the pink icing doesn't make much sense but I ran out of Orange food colouring *oops*
It's a little Halloweeny don't you think?
 I looked every where for a decent chocolate orange cupcake recipe but none of the ones I found really wowed me so I decided just to make it up as I went along and this was the result. You can use this recipe to make pretty much any flavour of cupcake you just have to know when and where to make substitutions :-). I'm thinking strawberry and white chocolate next!!

Okay enough chat, here we go:

Ingredients:
For Cake:
125g Plain Flour
1 1/4 tsp Baking Powder
1/2 tsp Salt
100g Unsalted Butter (or dairy free alternative)
100g Caster Sugar
2 Eggs
19ml Orange Extract
25g Cocoa
75g Milk Cooking Chocolate
10g Orange Gel Food Colouring

For Decoration:
440g Icing Sugar
110g Unsalted Butter (or dairy free alternative)
1 Pinch of Salt
19ml Orange Extract
2 1/2 Tbs Golden Syrup
2 tsp Vanilla Extract
75g Milk Cooking Chocolate
10g Orange (or in this case Red) Gel Food Colouring
Terry's Chocolate Orange mini segments
Sainsbury's Glimmer Sugar in Gold to sparkle!!

Method:
For Cake:
Preheat oven to 170 degrees

In a medium bowl mix the flour, baking powder and salt together then set aside while you work on the wet ingredients.

In a large bowl cream the butter and sugar together until smooth-I used a boring old hand held mixer and a wooden spoon :-( whilst dreaming of that stand mixer.
Once smooth beat in the 2 eggs and the orange extract (most bottles come in 38ml so just use half the bottle).

Bring back the dry stuff and mix it into the wet mixture a large spoonful at a time. Use a mixer for this if you can as the mixture can become a little stiff.

Once all the ingredients are combined it's time to separate them into two bowls- put half in one bowl and keep half in the one you are using.

To one bowl add 25g of cocoa and 75g of melted chocolate (1 minute in the microwave should do it) and stir until the chocolately goodness is undeniable!
To the other, add 10g of Orange food gel and stir-that was someone easier :-p

Place cupcake cases in a cupcake tray (we like a nice deep one) and spoon in the mixture one colour at a time. We put chocolate in the bottom then added orange on top.
Once the two colours are in each case use a skewer to slightly mix the colours together to create the marble effect.



Pop in the oven for 15-17 minutes or until lightly browned.




Now you just have to leave them to cool for around 10-15 minutes before they are ready to decorate.

For Decoration:

In one large bowl (we washed and dried as we went along here because seriously you need so many bowls for this recipe *haha*) add the icing sugar,salt and the softened butter together and mix on the lowest speed other wise you'll look like you've got a really bad coke habit.
Once they are both fully mixed together you can add the orange and vanilla extracts to the mixture along with the syrup. 

And now it's time to separate them again: you know the drill half in one bowl half in the other.

To one bowl add 75g of melted chocolate and stir well.
To the other add 10g of your chosen gel food colouring.

It's really up to you how you decorate from here: we used a small star nozzle to pipe on the pink, which we did around the edges of the cake and into the middle. Once every cake had been pinked we popped them in the fridge to set for a minute or two.

Use the cooling time to wash out your piping bag ready to be filled with the chocolate icing.

For the chocolate we changed the nozzle to a slightly bigger star so we could have a noticeable peak and filled in the top part of each cupcake.

And that's it really- all that's left to do it pop a Terry's Chocolate Orange segment on top and sprinkle with your glimmer sugar et voila...

Pop them back in the fridge for 5 minutes and then enjoy!

These are so yummy and I can't wait to try different flavours. What flavours would you try, and would it be weird if I just started dusting all my food with edible glimmer sugar?

Vegan Pancakes // Recipe // Healthy Spring Eating

Hello!! *Waves erratically*

How is everyone doing? Have we all been having a great Spring? I absolutely love Spring, it absolutely definitely has to be my favourite season (I'm sure if I lived anywhere other than Scotland, my favourite would be summer, but I don't so it isn't lol). One thing I always seem to have more energy for in Spring is baking, I love shutting myself in the kitchen, blasting my music and just getting my bake on.

One day a week or two ago I had a huge craving for pancakes,but not just any pancakes, vegan pancakes! Now I am not a vegan, if I was I would absolutely starve to death- no joke- but I do love making things that everybody can eat. By making vegan products no-one is excluded because they DON'T TASTE ANY DIFFERENT TO NON-VEGAN ONES!! I'm sorry I shouted but my friends always turn their noses up when I tell them something is vegan, and there is no need.

Anyway enough rambling! I made Vegan pancakes, and here's what you need to know to make your own.

Ingredients: 
1 cup (150g) of plain flour
1 tbsp of sugar
2 tbsp baking powder
1/8 tsp salt
1 cup (240ml) of soya milk (or other vegan equivalent)
2 tbsp of vegetable oil

And no that is not a typo I did write 2 tablespoons of baking powder, I don't know why you need so much but trust me you do.


Method:
It really is such a simple recipe, alll you have to do is...

  1. Pop the flour, sugar, baking powder and salt together in your chosen bowl and mix until well combined. Just use a wooden spoon for this because and electric mixer will just send everything flying all over you.
  2. Once all your dry ingredients are mixed together, mix in the soya milk and oil and beat together until smooth. You can use your electrix mixer for this part if you wish but I stuck with my spoon and they turned out grand. N.B. The finished mixtue will appear at lot thicker than your average pancake batter, this is OK! 
  3. You all know how to cook pancakes right?? No? Okay...
  4. Add just under a tsp of oil to a frying pan on a medium heat and shoogle it around until the whole pan base is oiled. Then drop a large spoonful of batter into pan. Once the pancake starts to bubble all over (approx 2/3 minutes) flip  it over and cook for a further 2 minutes...et voila!! 




Perfect Vegan Pancakes!! All you have to do it add a topping and enjoy! My favourite topping for warm pancakes is my Pure Soya Vegan Spread (just like margarine but so much better for you).
